Why Fermented Food?

I had no idea fermentation went beyond beer.  Seriously.  Then I got sick. Real sick. I had arthritis, bone spurs and needed a hip replacement. I had acid reflux, depression with anxiety, not to mention the stopped up gastro issues that come with pain meds. I was on every pill the Dr. offered me. It got so bad, I couldn't keep food down. I got scared. I felt hopeless, and that is a bad way to be. Frantic for help, after years of looking for "the cure" in medications, my body was broken, and I'm just 56.

And then it happened. An old friend from high school introduced me to fermented food. 

"Eat it", she said, "you will feel better". 

How?
